Scrub each kiwi well under water to remove kiwi fuzz from the skin.
Sliced kiwi fruit into 1/8 - 1/4" thick slices. Discard tips.
Lay kiwi slices on dehydrator trays without any overlapping.
Dehydrate kiwis at a temperature of 135 degrees for 8 hours until dry and bendy.
Cool dehydrated kiwi completely and store either in zip lock bags for short-term storage or mason jars for long-term storage.
Label your container(s) with contents and the date.
Notes
For the next week, work on conditioning your dried kiwi chips to ensure they are 100% dry. This means you should shake the container each day and open and close the top of the bag, feeling around for dampness. Keep an eye out for any condensation on the container and dehydrate for a bit longer if needed.
