Dehydrated kiwi is a unique and delicious alternative for a snack for camping. Kiwi is definitely not a fruit leather you will easily find in most grocery stores so it is worth making your own dried kiwi creations.
Choosing Kiwis for Dehydrating
The first step is to select ripe kiwis. When dehydrating any fruit, you always want to select the ripest fruit possible. This is because ripe fruit will have more sugar, which means it will dry faster and taste better.

You’ll want to use kiwis that are slightly soft to the touch, not mushy, and have no brown spots.
If your kiwis are not ripe yet, you can place them in a paper bag with a ripe banana overnight. This will help speed up the ripening process.
Preparing Kiwi for Dehydrating
Once you’ve selected your kiwis, wash them thoroughly. You can dehydrate kiwis with the skin on or off, it’s totally up to you.
If you choose to leave the skin on, which I do, scrub each kiwi to remove most of the hairy fuzz from the surface. It is worth doing and truly not too time-consuming. Leaving the skin on is beneficial because it contains antioxidants and fiber.

After scrubbing, make sure to slice the kiwis thinly into rounds so that the skin will dehydrate properly and not be tough to eat.
You can use a mandolin or slice by hand. I find either method takes about the same amount of time. I don’t use the end slices.

How Much Kiwi to Dehydrate?
It’s helpful to consider working in bulk when dehydrating kiwis for camping since each kiwi yields about 8-10 slices depending on their size.
You’ll want to work with approximately 15 kiwis (2 pounds) in order to fill a quart-size mason jar.

How to Make Dehydrated Kiwi in a Dehydrator
Now that your kiwis are sliced and ready to go, it’s time to dehydrate them! Place the sliced kiwi on the trays of your dehydrator, making sure to not overlap the edges.

Set your dehydrator to 135 degrees Fahrenheit and dehydrate for 8-10 hours. In my Brod and Taylor Sahara Dehydrator, kiwi fruit takes no more than 8 hours. Sometimes it helps to rotate the trays inside your dehydrator halfway through to encourage even drying.
Dehydrated kiwi slices will not be crisp when done but rather bendable and pleasingly chewy, like dried apple slices.
