This savory and not-too-sweet version of old fashioned Sloppy Joes will have everyone asking you for the recipe! This recipe pairs well with a side of tangy coleslaw. Note that the campfire-building time is included in the recipe time!
1red pepper, chopped into 1/4" diceEqual to at least 1 cup (more can be used!)

Instructions
Start by setting up a strong campfire (if cooking over fire) with a mix of larger logs and smaller kindling. Place a campfire grate over the flames before the flames get too hot, ensuring it's secure and stable. Otherwise heat your pan up over the camp stove.
Let the wood burn down for about 20-30 minutes for the base fire. Then add fresh logs to the top to pile it off. As they burn they will create constant heat to help everything cook consistently. If needed there should be fresh wood added to the pile as you cook, pushing the hottest part of the embers directly under the pot. Flames are needed to sauté the ingredients, rather than embers.
Mince and chop all your vegetables. You can choose to do this at home prior to arriving at camp and pack everything into containers to make this an even faster meal. Measure out your liquid and dry ingredients as well so all you need to do is dump them in as needed. I combine all the dry ingredients together and toss them all in at once.
Using heat-proof gloves, please your a cast-iron skillet or Dutch oven on the grate. Once hot, add your choice of ground meat (beef or turkey). If using turkey, a splash of oil or a tbs of butter will help prevent sticking. Cook meat until browned, breaking it apart with a long-handled spatula.
Toss in diced red bell pepper, chopped yellow onion, and minced garlic. Sauté until softened and just starting to get golden, about 10-15 minutes.
Add in your seasonings—Worcestershire sauce, dry mustard, paprika, black pepper, kosher salt, coconut sugar, and ketchup. Stir well, letting the mixture simmer and thicken for 5 minutes.
Once the Sloppy Joe mix is rich and flavorful, serve it on toasted buns. You can wrap the buns in aluminum foil and warm them by the fire's edge for an extra touch.
