Delicious Cast Iron Skillet Diner Style Home Fries
I grew up eating some pretty amazing home fries, whether it was the soft and tangy paprika-dusted ones at a favorite local breakfast cafe or the classic ones I’d order at a diner at 9 pm, during my high school and college years in the 90s.
Those places faded and I moved away. I started missing those familiar flavors. That’s why I got to work in my kitchen almost every Saturday morning making test batches of home fries, slightly adjusting the ingredients and cooking method slightly each time.
This recipe has been with me since my college days. I’ve spent years tweaking and perfecting my diner style home fries and it’s finally just how I love it. The potatoes have crusty bits on the outside, are soft on the inside, and they’re full of flavor.
It may have taken me at least ten years to get them just right, but I finally cracked it and now making these is second nature for me. These potatoes are a piece of my past and part of our cozy weekends at home today. It’s a dish my friends and family can’t get enough of.
So, let’s dive into this recipe that’s been a journey of trial, error, and a whole lot of love. Nothing beats a plate of home fries with a side of fried eggs and crispy bacon! They are the perfect hangover breakfast and will warm you right up on a chilly winter morning.

Tips for Making Diner Style Home Fries
I want to be clear that this is not a recipe for hash browns or crispy home fries that have been deep fried. This is a stove top recipe that involves sauteeing and patience to achieve the ideal mix of crusty bits and soft golden edges.
Make these diner style homefries ahead of time and take them camping for breakfast. You can reheat them over the campfire! Everyone will be very happy with a warm plate of home fries on a cool morning at your campsite with a cup of coffee on the side.
The below items are must-dos for making yummy home fries my way. I consider them to be the basics and I don’t recommend straying from them.
- Par-boil the potatoes
- Use a well-seasoned cast iron pan
- Use a mix of olive oil and butter
- Use paprika for seasoning
- Don’t rush the process
Even though it took me so long to get these home fries to how I wanted them, the recipe can also be followed a bit loosely contrary to my above statement. Only have a quarter of an onion? Or do you only have green peppers or none at all? Do you only have garlic powder? These things don’t matter. Follow my method and you will still end up with crazy delicious breakfast potatoes.

Simple Ingredients for The Best Home Fries Recipe
POTATOES – The preferred potatoes for home fries are Russett or Yukon Gold, or any variety that is starchier. However, I have used all kinds of potatoes, including red potatoes, for this recipe so use what you have. Just know that the starchier types of potatoes create a crustier outside and a more pillowy inside.
BELL PEPPERS – I really love peppers in my breakfast potatoes. And while this does make them more of a Potatoes O’ Brian dish, I still call them my diner potatoes. You can omit them if you wish or you can use jalepeños or any other spicy pepper instead. I prefer using red bell peppers in my home fries.
ONION – The onion adds a lovely flavor to the home fries and breaks up the texture nicely. It doesn’t matter if you use yellow, white, or red onion. Use whatever you prefer!
GARLIC – I love to add a couple of cloves of minced garlic for that deep but fresh garlic flavor. Having grown up in an Italian household I put garlic into any dish that could handle it. If you don’t love fresh garlic you can skip it and use just garlic powder. I use both.
OLIVE OIL – Olive oil helps the potatoes to brown and crust nicely. The onions and peppers are also sauteed, first, along with the garlic in the olive oil to soften them before anything else.
BUTTER – Butter creates a deep rich flavor, helps prevent sticking in the pan, and combines with the olive oil beautifully to help create a lovely crusty and sometimes crunchy coating on the potatoes.
VINEGAR – The original breakfast potatoes I modeled my recipe after had a splash of vinegar in them and today this is how I prefer to make my home fries. You can use apple cider vinegar or white vinegar, it doesn’t matter. Use what you have on hand or whichever one you prefer the flavor of. The vinegar gives the potatoes a delightful tang and makes them a unique recipe.
SEASONINGS – Paprika is a must in this recipe because it imparts not only a beautiful rich golden hue to the potatoes but it also adds a rich mild pepper taste to each bite. Even though I use fresh garlic, the addition of garlic powder adds a more universal garlicky taste to the dish. I love the extra flavor! Add salt and black pepper to complete the seasoning.

Instructions for Diner Home Fries
I can’t explain why but these taste so much better when made on a Saturday or Sunday morning! Make them when you have time and do not feel rushed.
Crispy diner-style potatoes take some time to make! Comfort food needs to be cooked with love. Leftover home fries reheat beautifully the next morning, as well, in a covered dish in the oven.
1. Cube and parboil the potatoes.
Cut the potatoes into bite-size pieces, just under one inch in size. No need to peel them! Boil a pot of water and toss in the diced potatoes. Cook in boiling water until just fork tender and no longer. This will take 5-6 minutes. If you boil them too long they will turn to mush of starchy paste. Drain them.
2. Use a cast iron pan. Sauté onions and peppers first.
Place cast iron skillet over medium-high heat. Add butter and olive oil to the pan and sauté the pepper and onions, first, then add the garlic to the pan after they have softened. Stir often. Lower heat to medium.
3. Add the well-drained par-boiled potatoes and seasoning.
Add the potatoes to the pan and mix everything together. Add the seasoning and stir. Let the potato mixture sit over medium heat for 5 minutes, browning them. A light golden brown crust should form.
4. Be patient and wait for the crust to form.
Take a spatula and flip the potatoes without stirring them too much. Add another tablespoon of oil and once again let them sit undisturbed for another 5 minutes. Flip again. Lower the heat a click or two. The goal is to get most of the edges of the potatoes to brown eventually without burning.
5. Final Touches
Continue cooking until home fries are fully cooked and develop a nice crust on some of the edges. The crispy edges are what make these so delicious! This can take some time and you can cook to your own preference. Add a splash of vinegar and adjust the seasonings to your liking. Serve homestyle potatoes hot with a couple of eggs and toast!


The Best Diner Style Home Fries Ever
Ingredients
- 1.5 pounds russet potatoes or a mix of whatever kind you like, (skin on) chopped into approximately 3/4” cubes
- 1 small red or green bell pepper, chopped into small pieces
- Optional 1 red chile or jalepeño, chopped
- 1 small-medium white, yellow or red onion, chopped into small pieces
- 2 cloves garlic, minced
- 2 tbs butter
- 3 tbs olive oil, plus 1 tbs.
- 1/2 tsp garlic powder
- 1 tsp paprika powder
- 1/4 tsp ground pepper, or to taste
- 1 tsp sea salt, or to taste
- 1 tbs apple cider vinegar or white vinegar (or less to taste)
Instructions
- Bring about 4 cups of water to boil, enough to fully cover the potatoes and then some.
- Boil the potatoes until almost tender, about 6 minutes. Do not overcook or else they will break down into mush in the frying pan.
- Meanwhile, chop the onions and pepper. Mince the garlic.

- Put a heavy pan, preferably cast iron, over medium heat. Add 3 tbs oil and butter and wait for butter to melt.
- Drain potatoes.
- Add onion, pepper (and jalapeño if using), and garlic to the frying pan. Sauté for a few minutes until soft.
- Add potatoes and spread into an even layer.

- Add all the spices and seasoning, excluding the vinegar. Stir. Let the potatoes sit and cook here for 5 min. Be sure to observe for too-rapid browning, this will depend on your stove. You don’t want the potatoes to burn but they should begin to turn a golden brown.

- After the initial browning takes place use a flat-edged spatula and scrape along the bottom of the pan to stir and somewhat flip the potatoes. No need to be too fussy here. The goal is to get most of the edges of the potatoes to brown eventually. Lower the heat if less browning is needed at this point.
- After another 3-5 minutes repeat the scrape and stir process. Sauté another 3-5 minutes to let flavors blend and reach desired goldenness is reached. At this time you may need to add another 1 tbs or more of olive oil over all the potatoes to promote browning and help with stickage. Continue cooking until home fries are fully cooked and develop a nice crust on some of the edges. This can take some time and you can cook to your own preference.
- Add more sea salt and any other seasonings, to taste if desired. Be creative!
- Add 1 tablespoon or less to taste, of vinegar and stir for a minute to blend. Serve hot. These are delicious served with over-easy eggs on top!
